Favorite Summer Tomato Salad
If you love tomatoes like me, then this is a must try! I enjoy making this when I’m craving a light but filling snack. Grab your favorite blue cheese dressing and enjoy!
INGREDIENTS:
Spinach
1 piece burrata
1 medium tomato
Green onions
2 bunches of basil
Blue cheese dressing
DIRECTIONS:
Slice tomato and burrata over a bed of spinach.
Chop green onions and basil and sprinkle on top.
Drizzle blue cheese dressing over the dish.
Sweet Potato Salad
An absolute family favorite! I love adding to sweet potatoes to any side dish because not only are they delicious, but a healthy and filling choice!
INGREDIENTS:
1/2 tsp cumin
1/2 tsp coriander
1/2 tsp paprika
1/2 tsp cinnamon
1/2 tsp ginger
1/4 tsp cayenne
1/4 cup slivered almonds
3 large sweet potatoes diced and roasted (also available from SHPC)
1/2 cup raisins
1/2 cup Primal Kitchen Mayo
Zest from 1 orange
1 bunch mint
1 bunch parsley
1 tbs garlic
DIRECTIONS:
Mix all ingredients together but parsley and slivered almonds.
Once it is fully mixed, now garnish with parsley and slivered almonds.
Overnight Oats
Move over because my overnight oats are coming! Save yourself time in the morning by making these delicious overnight oats that are bursting with flavor the next day. Bonus- preparing it is as simple as it gets. This makes enough for 2, so enjoy with your loved one!
INGREDIENTS:
1 cup oats
1 1/2 cup almond coconut blend
1 tbsp chia seeds
1 tbsp coconut
1/4 tsp almond extract
Sea salt- to your liking
1 tbsp sugar free maple syrup
Blueberries or other fruit
DIRECTIONS:
Mix all the ingredients together but the fruit.
Chill overnight. Add chosen fruit on top and enjoy!
Summer Grill
Get your grill on before it’s too late! I love throwing all my favorites fruits and vegetables on the grill with my chicken. It adds such a delicious char flavor to them, and it could not be easier to do!
INGREDIENTS:
1 pack chicken tenders
2 zucchinis halves
3 peaches halves
1 head of romaine halves
Arugula
1 bunch parsley
Lemon zest- to your liking
EVOO
Salt and pepper- to your liking
DIRECTIONS:
Add the lemon zest, EVOO, salt, and pepper to the chicken tenders, zucchinis, peaches, and romaine.
Grill.
Add the grilled food on top of a bed of arugula. Add chopped parsley on the dish.
Back to School Trail Mix
The kids are headed back to school, which means I have to be creative with sending them to school with a healthy snack! I created this trail mix with the mindset of incorporating a little bit of carbs, fats and protein. It ‘s so simple to make! Try it out and let me know what you think!
Ingredients:
1/4 cup of Almonds
1/4 cup of Peanuts
1/4 cup of Raisins
1/4 cup of Cashews
1/4 cup of Sunflower Seeds
1/4 cup of Chocolate Chips
1/2 cup of Walnuts
1/2 cup of Coconut Flakes
1/2 cup of Pecans
1 cup of Pretzels
1 bag of Popcorn
Directions:
Mix it all together and fill it into zip lock bags for the family!
Roasted Lemon Rosemary Potatoes
Honestly, who doesn’t like potatoes? I absolutely love cooking with them because they are the perfect side to any meal. A delicious mixture of zest and herbs creates a flavorful, mouth-watering dish you will definitely want to make again.
Ingredients:
1 lb baby potatoes
1/4 cup ghee
1/4 cup oil
Lemon zest- to your liking
3 sprigs rosemary (3 in)
3 tablespoons sea salt
Instructions:
Heat up cast iron skillet.
Cut potatoes in half and place them face down, “booty up”. Add the ghee and oil and mix.
Finely chop the rosemary. Mix it with the lemon zest and sea salt.
Add mix to the potatoes and stir.
Cook until golden brown.
BBQ Bean Bacon Bake
What’s better than the combination of BBQ, beans, and bacon? Nothing! Bush’s beans is always my go-to when making meals like this one. This mouth-watering dish is the perfect meal to serve at a backyard barbecue or neighborhood gathering.
Ingredients:
2 cans Bush’s Beans
1 red bell pepper
1 green bell pepper
1 medium onion
1 bunch green onions-chopped
2 tablespoons spicy brown mustard
Bacon
Instructions:
Set oven to 425.
Dice the peppers, onion, and green onions.
Add beans, peppers, onions, green onions, ketchup, and mustard into dish. Mix the ingredients.
Add bacon on top of the dish.
Cook for 45 minutes.
Berry Good Puff Pastries
These mouth-watering pastries are sure to win your family and friends over. From the golden, flakey pastries to the sweet, fluffy filling, any choice of berry will be the perfect topping. They are the perfect dessert to a delicious Whole30 dinner.
Ingredients:
1 package Puff Pastry (frozen section favorite)
16 oz mascarpone cheese
1 cup confectioners sugar
8 oz cream cheese
1 container blueberries or fruit of choice
1 egg
Zest and juice of one lemon
Instructions:
Cut puff pastry into squares.
Make 2 small horizontal slits in the pastry squares (you'll punch these sections out for the pastry filling later).
Whisk egg and lightly brush dough squares.
Follow baking instructions and bake until crispy .
White pastry bakes, combine mascarpone cheese, confectioners sugar, cream cheese, and lemon juice/zest into a mixer.
Whip together with mixer until fluffy.
Remove puff pastries from oven and pop out the top center from the slits you made prior to baking.
Scoop a dollop of filling mixture into the center.
Top with berries .
Sprinkle confectioners sugar on top for an extra treat.
